Ingredients

  • 1 cup basmati rice
  • 1 1\2 cup water
  • 1 1\2 oz butter
  • 2 oz green peas
  • 1 oz finely diced(brunoise) carrots
  • 1 bay leaf
  • 3 pepper corns
  • 1 whole clove
  • 1 pod green cardamom
  • 1\2 tsp salt
  • 1\2 tsp whole cumin
  • A pinch of saffron

Recipe

In a medium hot sauce pan, melt butter. add cumin, let it brown. Add peas, carrots, bay leaf, clove, cardamom. Cook for 1 minute. Add water and salt, bring it to boil. Add rice, let water simmer, bring heat to minimum and cover completely for 15 minutes. Turn off heat, sprinkle saffron, cover again, let it sit for 5 minutes. Fold rice gently, garnish with julienne carrots and cilantro.
